The Village Anchor Summer-Fall 2025 Dinner Menu

Joining the Marketing Team at Belle Noble Entertainment Group was an exciting endeavor, and the projects assigned to Rachel introduced her to many new aspects of digital and visual marketing. Belle Noble Entertainment Group manages and operates four major restaurants in Louisville, Kentucky. One of Rachel’s key tasks was introducing new menu items for one of these restaurants, The Village Anchor.

The new additions provided an opportunity for a complete menu redesign. For more than a year and a half, The Village Anchor operated with a menu that was functional but, given the restaurant’s older demographic, often caused certain items to be overlooked or dismissed.

Rachel’s personal experience as a host and server at The Village Anchor offered valuable insights. Understanding what guests look for, what supports the serving and kitchen staff, and what aligns with management goals enabled her to create a menu that benefited every aspect of the restaurant’s operations.

Highlighting optional add-ons became a key focus. Protein upgrades for salads and seafood additions for entrées were previously difficult to find, which negatively affected server check averages, kitchen inventory, and customer satisfaction. In the new design, Rachel ensured these options were clearly listed next to the dishes they could complement.

Another area of improvement was menu descriptions. Along with adding new items, Rachel revised existing descriptions for consistency and clarity throughout the entire menu.

For the visual design, she carefully considered the restaurant’s atmosphere - rich red velvet accents, wood flooring, and striking bar décor. The result was a menu that remained minimalistic and elegant while complementing the warm, sophisticated environment.

After the launch of the redesigned menu, The Village Anchor saw a noticeable increase in protein additions, a smooth introduction of new dishes, and positive feedback from regular guests who appreciated the enhanced visibility and readability.
